Keeping a plan stored gives you another plan to switch to; it does not mean every saved plan is active simultaneously.
Digital activation and switching for travel
An eSIM is an industry-standard digital SIM that lets you activate a cellular plan from your carrier. Activation happens without obtaining a physical card or waiting for one to arrive by mail.

For international travel, that removes the need to carry and swap SIM cards as you change plans. Apple also describes eSIM as more secure than a physical SIM because it cannot be removed if your phone is lost or stolen.
Carrier support and service plans
Using an eSIM requires both a carrier that supports it and a wireless service plan. Your carrier has the details.
Apple says the eSIM industry standard is supported by over 500 carriers worldwide, including AT&T, T-Mobile and Verizon.
Cellular connectivity outside your purchase country
Unlocked iPhone models may support 5G and/or LTE outside the country of purchase when using a valid SIM from a supported carrier. On iPhone Duo, that service uses an eSIM. Cellular technology support is based on iPhone model number and configuration for GSM networks.
A data plan is required. 5G, Gigabit LTE, VoLTE and Wi-Fi calling are available in select markets and through select carriers. Speed figures reflect theoretical throughput; actual speeds vary with site conditions and the carrier.
Satellite features for travel
iPhone Duo includes satellite features for contacting emergency services, getting roadside assistance and staying in touch outside cellular and Wi-Fi coverage.
