In Apple’s words, “Natural Titanium celebrates (Titanium’s) raw metallic nature.” Even though the statement is brief, the true answer is, in fact, buried within the ‘raw metallic’ aspect of the description itself.

Titanium naturally has a silver-gray platinum color, which you see on most high-end products that use titanium, such as spacecraft, rovers, ships, etc. 

For its iPhone 15 Pro model, Apple is using Grade 5 Titanium, which is an alloy that mixes other components like aluminum and vanadium, and that gives it a natural grayish hue that is deeper than both silver and gold. It is also what you see on the Apple Watch Ultra, which comes in what’s best described as silver only.
