Mushroom location in Hytale: Where to find it
To find mushroom blocks, you must travel to an Autumnal biome.
These biomes typically spawn fairly close to your initial starting location. Press the M key to open your map. Look for areas that are of brownish-auburn color. These are the autumnal biomes where you'll find mushrooms.

Once inside the Autumnal biome, look for large mushroom structures. The blocks that make up these structures, such as the Red Mushroom Block, can be harvested individually.

How to harvest Mushroom blocks
There are two primary ways to collect these blocks:
By Hand
You can break mushroom blocks with your bare hands if you do not have tools available.

With a Hatchet (recommended)
For much faster harvesting, use a hatchet.

It typically only takes a few swings to break the block.
